Is there a chance that your Self-Rising flour was past its use by date? Eventually the added leavening agents in the flour will expire and you won't get a good rise. Another possibility is that you inadvertently added a bit too much flour, which is easy to do when measuring flour by volume rather than weight. This would cause the dough to be stiffer and not rise as well. We recommend this method when measuring flour by volume.
