Greetings KAF and fellow bakers! I, too, love this recipe. Made it for the first time yesterday and it was PERFECT. The only problem (for me) is the salt content. I can easily remedy that, but I always make a new recipe "to the letter" the first time, and then adjust. I have to say, I was a bit daunted by the total amount of time involved, but that actually worked to my advantage - got lots of little chores and laundry done between the "stroking" times, and ran errands during the rise times. Oh, and that crunch when they came out of the oven - as one blogger said "pure love". I wish there was a good way to make breads like this for my gluten-free grand kids.
