This recipe looks very close to the recipe for ciabatta rolls using an overnight starter done the night before. I understand the overnight starter adds flavor to the recipe. https://blog.kingarthurflour.com/2012/05/11/ciabatta-rolls-more-crust-more-filling/ Can I use this technique with these sub rolls? If so, what is the substitution? Thanks for all of your great recipes. My wife and daughter love your blog recipes. Francis
