Until I saw the photo of cutting the moat into the cake I was so confused by this sentence: "To assemble, turn the cake bottom-side up. With a sharp serrated knife, carve a moat or channel in the cake. Be sure you don't cut through the bottom of the cake. " But...didn't you just say to cut into the bottom of the cake? How about "Be sure you don't cut all the way through the cake." instead of "Be sure you don't cut through the bottom of the cake." I couldn't imagine what I was supposed to do without seeing the photo.
