I used 12 eggs and and the weight was 388G I added another and it was 406G. this is what I use. The cake was a disaster. At the end of 40 minutes the cake was a very light brown on top and it had come away from the top of the pan a significant amount the temperature was 115*. I removed the cake from the oven and tried to turn it upside down on a bottle. The bottom of the cake pan released and the cake plopped down. This was a total disaster. If it had cooled the inside might have been edible but I put it down the disposer. I have made this cake before and the only problem I had was around the top of the cake it released from the sides of the pan reducing the height of the cake, I use an aluminum cake pan and in the blog I see that a blace pan was used I do have one like that. The blog also shows the cake at the very top of the pan that has not released. I have to make another cake for a Birthday party and would like any suggestions. The eggs were fresh size large. I guess I will stick with one dozen and not worry about the weight. Any suggestions will be appreciated.
