Oh dear, Suzanne! That's quite the conundrum. Most cakes are done when their centers read between 205°F and 210°F on a digital thermometer. That's the best way to know a cake has fully baked alongside bouncing back. If your oven has any cool spots, it might be worth trying a few different sides or racks in the oven. Annabelle@KAF
