Hi Ettie, we like using this lower temperature to ensure the cake stays moist and tender on the inside while the structure sets. Our other recipe for Traditional Angel Food Cake also calls for being baked at this temperature too; other recipes may use a higher temperature and less baking time, which is something you're welcome to try too. It tends to bake the edges a little more firmly and leaves the cake a bit less soft. Happy baking! Kye@KAF
