I made this recipe with a fed sourdough starter. I halved the recipe, but did not see your note to scale up the instant yeast a little bit until after I had made the dough. I refrigerated the dough 24 hours and then let the muffins rise 2 hours like suggested. The muffins are tasty but they do not have the "nooks and crannies" that I was looking for. Is this due to the fact I didn't scale up the yeast or did I not let them raise long enough?
