I used this dough for a vegan version, well, maybe more like a hot pocket. The dough is perfect for this; very delicious. I would suggest the authors would add one comment - and that is when putting the kneaded dough into an oiled container, turn the dough around so that the top of it is also oiled. I should have known to do this anyway from my other baking experience, but forgot and as a result the top of the risen dough formed a crust which was more difficult to shape into a circle. Otherwise, an excellent pizza dough recipe.
