What NO CHEESE? Come ON - we need cheese in these! Just add to the white sauce, which is how Emeril taught us/me to make mac and cheese. Go for it, Paul - we already have a recipe for "cheesy" scalloped potatoes on our site, so I wanted to make these just plain and simple, the way "the old folks" used to make them for Sunday dinner... Either way is yummy - so your choice. PJH
