Try brushing your dough with egg wash before you sprinkle the seeds on top. This should act like an edible glue (and will also help your loaf brown up nicely too). Spraying water on the dough once it's in the oven will create a crispy crust. Do this only if you like a thick, chewy crust. I hope that helps! Kye@KAF
