Salli, you can help your loaf retain a better texture if you do not cut into it until is has cooled completely. We know it is hard to resist the temptation, but you will be rewarded with a loaf that has a pleasant texture the whole way through. For increased moistness throughout the life of your bread, try adding 1 tablespoon of potato flour per cup of wheat flour in your recipe--the starch in potatoes attracts and holds water, and helps to increase the moisture content in baked goods. Alternately, you can try adding granular lecithin, which is a soy-based product that helps extend the shelf life of your bread. For best results, keep your homemade bread and baked goods in a bread keeper. We have an adjustable version on our website, which allows you to control how much air (and therefore how crusty) you want your bread to be. I hope this helps! Kye@KAF
