Have KA rye flour on hand, but fearful to try this recipe due to our 7000' altitude. Any suggestions for just this recipe? I do have several high altitude recipes for regular white as well as no-knead white, but would really like to have a "deli rye w/seeds" HA recipe, as that bread is almost non-existent in this little mountain village. Thanks.
