PJ, I've been making the sandwich rye bread recipe from your website for quite some time and it calls for baking until the temp is 190. Why the difference in this recipe that calls for 205? I'm doubling the recipe & not free forming, but baking in 10 x 5 pans without addl gluten & getting a relatively good finished loaf rise.
