Hi, I frequently make a sourdough rye and I roll out my dough and then reroll to form the loaf - never had a problem with height. Also, if you have any ethnic E. European stores around, you can buy "ground caraway" powder which adds a nice touch but without the "bite" of actually getting a seed.
