 Hi Gayle, because our Danish recipe contains yeast, we wouldn't recommend this type of substitution. However, we have had some success developing a Gluten-Free Puff Pastry recipe using our new Gluten-Free Bread Flour, and it may, ultimately, be possible to use this flour in a Danish recipe, although significant tweaking will likely be necessary. Stay tuned for future developments, and I will pass along your request for a gluten-free version of our Danish recipe.
