Hi Eva, you can freeze some or all of the dough after you've completed all the folds. I wouldn't recommend freezing the dough for longer than a month. Thaw out overnight in the refrigerator before rolling and shaping. You can also freeze the baked Danish rolls, but they won't be quite as amazing as freshly baked. Our Unbleached All-Purpose flour is higher in protein than other brands of all-purpose flour, so you may not get enough strength in the dough if you substitute another type of all-purpose flour. For best results, I would recommend using our flour for this recipe.
