Hi Lisa! You certainly can make a half recipe of these Danish pastries. If you do freeze them they won't be quite as flakey after defrosting, but you can try defrosting and then re-crisping them in an oven that's been preheated to 350°F for about 8 to 10 minutes. Happy baking! Morgan@KAF
