Hi Candice, we didn't test freezing the unbaked pastry (only the fully baked pastry), so we're not sure how this will turn out. If you're willing to experiment, feel free to give it a try and let us know how it turns out. Or if you're looking for a tried and tested method, consider dividing the dough and baking the pastries fully and then wrapping them in plastic and freezing until you're ready to serve. Kye@KAF
