Hi Brooke, at the end of step 12, the dough can be left in the fridge for as long as 16 hours (maximum). Since the dough contains yeast, it's best to follow this recommended timeline in order to get the most oven spring and rise in your pastries. Otherwise, you can skip the rest in the fridge and put the dough in the freezer for up to a month. Let the dough thaw in the fridge overnight before continuing with the recipe. Happy baking! Kye@KAF
