Rakan, are you letting the dough temper for a few minutes before you start rolling? If the butter is hard as a rock it could tear the dough. Also, what's the consistency of your dough? It should be quite soft and pliable, almost floppy in consistency before you roll in the butter. If not, you may be adding too much flour to the dough. Are you measuring by weight or volume? The dough should be quite forgiving to work with. Susan
