I'm not going to make these yet - it is way too hot and humid here to do this successfully. I just wanted to say that since I started baking with my own sourdough last year, KAF recipes are always the best. This is an amazing post and thanks for doing all the work PJ! I'd gobble those so-called beastly ones in a heartbeat! Thank you!!! PS - after almost a year my sourdough starter has developed a good sour taste with a long, slow cool rise. FYI. Ordinary yeast doughs here in So Cal rise super fast.
