I know this is an older thread, but I just wanted to say thank you! I saw on Reddit these beautiful -- and beautifully shaped -- Danish pastries, and I've been wanting to try my hand at it ever since. I came across Flourish and decided this was the weekend I did it.
I wish I could post a picture. They came out beautifully. Instead of individual pastries, I made basically two long braids; one filled with mascarpone and the other with a pecan/brown sugar/cinnamon mixture. I will say, though, that the photos on the blog don't really show the layers of a laminated dough. Worried about this, I doubled the time I chilled the dough in between turns (I've made puff pastry once, and the recipe was maniacal about chilling the dough for at least an hour in between turns).
Right out of the oven came pastries that had great layers, perfectly browned, and it smells heavenly in my kitchen. So, I just wanted to say thanks! Breakfast tomorrow will be awesome!
