Hi Ettie, we're sorry for the delay in responding to your baking question! Ordinarily we don't recommend refrigerating cakes (unless they are frosted with a type of icing that requires refrigeration), since the refrigerator tends to dry out baked goods. A cake like this should keep well at room temperature for three days. Allow to cool completely and then store in a plastic bag. For longer storage, we would recommend freezing rather than refrigerating. You could allow to thaw out at room temperature overnight, and it should be fine to serve the next day. At this point, if you have the cake in the refrigerator, I would just take it out and leave it at room temperature (in plastic) until tomorrow.
