Hi Harold, Type 85 flour is an high extraction flour that has a much higher percentage of bran and germ than white flour, but isn't considered fully whole wheat. We don't have a high extraction flour available in our flour selection geared for home bakers, but we do in our commercial line of flours that are available in bulk through distributors. If you don't have access to this type of flour you can make a good replacement by mixing half whole wheat flour and half bread flour.
