Thank you so much for the quick response, Elisabeth! I went ahead and experimented with substituting the 3 ripe bananas for the carrots (as I oddly didn't have any carrots in the house or zucchini though I love both). OMG!!! The muffins came out PERFECTLY and SO deliciously moist! I followed the recipe almost to a "T" but added 2 TBS of ground flaxseeds, substituted half of the veg.oil with coconut oil, and used dried cherries and apricots instead of raisins. Relieved to see that the bananas worked and will certainly make this recipe again!
