I do not think using banana in place of the 2 cups of grated carrots will work with this traditional recipe. Now, if you had some zucchini kicking around, that would be a better substitution (half carrot and half zucchini). Bananas are a better substitution for some or all of the sugar up to one cup. For now, I would encourage you to go with carrots and if you want to use some of those bananas, replace the brown sugar with them. Lastly, you may want to replace some of the banana with molasses (1-2 t.) to mimic the flavor of brown sugar. Enjoy and happy baking, Rejane! Elisabeth@KAF
