I use P.A.N., a precooked corn meal. It’s similar to masa harina and has a nice cooked corn flavor. It works just as well as semolina. I started using it instead of semolina because I rarely have that in my cupboards. It keeps the bottom of the muffin off the griddle so it doesn’t burn, but I find it doesn’t burn easily either. I’ve made this recipe many times and it’s a huge favorite. There are only 3 people in my family so I freeze the rest of the muffins after the first morning. If I get up at 6:30 or so on a weekend day I can mix the dough and set it to rise then go back to sleep for a while. Yum.
