Two quick questions (apologies if these have been addressed previously; I scrolled back, but not all the way!)

-Whole wheat flour for some of it? If so, what's the maximum proportion?
-What about an overnight (retarded ) rise in the fridge, in order to griddle them up first thing in the morning?
