PJ, I make my own croissants but after I roll them up I freeze them. When I want a few I then thaw them overnight in the fridge, let them rise and then bake them off. Voila fresh croissants every day. Can I do the same with these muffins? I’d rather bake two or three as needed than bake 16 and freeze the whole lot. How would you go about doing something like that?
