I'm making these now, they are rising. I'm curious, there is no butter, or sugar in these... most of the other bagels recipes I've tried call for sugar. Maybe to develop a more tangy taste, to go with the starter and the cheese? I guess I'll see how they turn out (and how long they last before going stale without any fat). I love cheese and cheese bagels, so I can't wait!
