If you're baking this bread in a cake pan, grease it with non-stick spray (like Everbake Pan Spray) and then sprinkle a handful of cornmeal or flour so that it coats the pan with a thin, even layer. If you use a bread baking crock or Dutch oven, follow the manufacturer's recommendations about how to season the pan. We tend to brush the inside with shortening and then use cornmeal or flour on top of this greased layer. If you have had problem with your oven baking the bottom of the bread intensely, put the pot on a sheet pan and also place it higher in the oven. Happy baking! Kye@KAF
