I made a Junior's cheesecake and it's excellent. It's lighter than any cheesecake I've ever had and can be cut without cleaning the knife between cuts. My cake did fall about 30% because (I think) I didn't allow it to cool in the oven; I took it out and set it on a cooling rack. I'm making another one soon for a neighborhood cheesecake contest and will try cooling it in the oven.
