Will definately give this a try this weekend but if you want an incredible experience try Maida Heatter's 8-hr cheesecake. 2 lbs of cream cheese, no crust, stark white inside & out. Baked 8 - yes 8! - hours in a low oven. Chemistry changes the structure/consistency to an entirely other level of cheesecake. If you are a cheesecake purist this will do it for you. It sounds delicious, definitely something I would like to try out in the future!-Jon
