Any ideas on how to get a vanilla base flavor? I know there are lots of white chocolate-type bits and bars, but I'd love to try this with a vanilla base and some chai spices added in. Oooh, or maybe using Fiori di Sicilia in place of vanilla extract and then adding in just cardamom? If you want to get away from using white chocolate (which, if you have a high quality white chocolate bar, makes for a great base. Just be sure it's lecithin content is low!), you'll also have to abandon the microwave. Vanilla fudge is best made on the stove (having worked on an island that specialized in fudge making, I am VERY familiar with this process--it needs to be cooked carefully!) and you'll want a very trusty thermometer.
