Hello! The two gluten-free flours, Gluten-Free Measure for Measure Flour and Gluten-Free All-Purpose Flour are never interchangeable, and Measure for Measure isn't meant to be used in designed-to-be-gluten-free recipes. (Unless the recipe was specifically written to use Measure for Measure.) You can read more about that in our blog How to choose which gluten-free flour to use.
So we highly recommend using the flour that this recipe calls for, Gluten-Free All-Purpose Flour, and some things you can use in place of potato starch are cornstarch, tapioca starch/flour, and arrowroot.
