I had planned to make this recipe after getting it from KAF in an email, and only saw the blog post today when I took a closer look at the recipe. There's no mention that I see in the recipe of not using stuffing that was made with meat products or inside the bird, which, since you clearly consider that important, I would recommend adding to the recipe itself.
Still looking forward to trying it, as it sounds wonderful, but now I'm trying to decide between freezing the bread (not a lot of room in the freezer after Thanksgiving leftovers and by-products, e.g., turkey carcass, extra stock) and using other leftovers instead of stuffing. Maybe I'll use cranberries and mashed potatoes.
