Hi Carrie, were you able to use the Gluten-Free All-Purpose Flour and xanthan gum called for in this recipe? Substituting a different type of gluten-free flour or omitting the xanthan gum could have caused the cookies to spread more. If your oven happens to run on the cool side, this could also lead to more spreading because the butter can melt before the cookies set up. It might be helpful to purchase an inexpensive oven thermometer and preheat the oven for a full 30 minutes before checking the temperature. If the thermometer indicates your oven is running a little cool or hot, adjust the oven setting accordingly and wait for the thermometer to read the correct temperature before baking.
