Sure thing! Scoop the cookies out, closely packed, onto a sheet tray and freeze solid. Remove and put in plastic bags and refreeze. When you need a cookie (or two, or three..), heat the oven, pull out the cookies, and bake from frozen. They'll take a minute or two longer, but will be just lovely with some milk. Happy baking!
