Hi there, Jeanne! You sure can make these flatbreads gluten-free, just swap out the flour called for with our Gluten-Free Measure for Measure Flour. You may find that it's easier to roll out the dough between two pieces of parchment paper, as the gluten-free dough will be a bit more delicate. We hope this can help and happy baking!
