Hi Laurie! You can flatten the pieces down to about 1/4" thick for thinner flatbreads. And you can definitely incorporate whole wheat. You could probably use whole wheat for all of the flour even, you'll just have to add more water, about 2 teaspoons or so per cup of flour.
