I tried this recipe and my neice loved it but my nephew only ate his muffin until he came to a clump of zucchini. If I grated the zucchini instead of shredding it, would I need to use 2 cups of grated zucchini? Yes, you will still need about two cups or 12 ounces of shredded or grated zucchini.-Jon
