Hi Ellen, in recent years we've made an effort to make our weights more consistent across recipes and in our Ingredients Weight Chart, so a cup of ripe sourdough starter is now considered to weight 227g, although the chart lists a cup of sourdough starter as weighing 227-241g. The variable here is degree of ripeness, since a ripe starter, even when stirred down, is likely to be airier and weight less than a cup of discard that is quite flat. The fact of the matter is that measuring starter by cups is always going to be a little problematic, so these days we generally refer to a cup of starter (whether ripe or discard) as weighing 227g. If you don't have a scale, you should always be sure to stir down ripe starter before measuring. Don't worry though, if you prefer to use 241g of starter in the Extra Tangy Sourdough bread recipe, it will still work just fine.
