Hi Nancy, sorry for the delay in responding to your question! If ever you're in need of  more immediate assistance, please don't hestitate to call our Baker's Hotline at 855-371-2253. We're here M-F from 9am-9pm EST, and Saturday and Sunday from 9am-5pm EST. For this particular recipe, you could certainly refrigerate the shaped loaves overnight in well-floured baskets, or bowls that are lined with well-floured clothes, but I would not recommend allowing the loaves to sit out at room temperature for that long.
