Hi Stacy! Stretching and folding your dough during its bulk fermentation step allows the dough to strengthen, the temperature to equalize and the dough to become more developed which can lead to a higher rise and chewier texture. While you can still make great bread if you forget a fold or two, it certainly does improve the overall quality of the bread. Happy Baking!
