This bread turned out exactly as promised. Chewy, moist and just tangy enough. I heard some healthy crackling of the crust when it came out of the oven, and cutting it open after cooling showed a beautiful crumb with some nice holes. I'm relatively new to sourdough, having only made the Rustic Sourdough a few times, and this turned out perfectly. Be sure to stretch and fold as directed, as it turned the dough from slack and sticky to structured and much more manageable.
