I'm going to try this today because it's the kind of schedule that suits me - plus I like a sourdough bread to taste sour! Many recipes I've seen want you to put the bread in the fridge overnight to rise in the basket. But no matter how I try, the dough always sticks to the cloth and deflates completely... also the trend today is to bake in a hot heavy pot, but at nearly 80, I refuse to tempt fate in that way. I will use the baking stone and steam, same as usual.
