This was the first bread I made with sourdough starter that was about two weeks old. My starter was not strong enough after the first week so I turned to Martin Philip's Breaking Bread and although I used all purpose flour to create the starter (I didn't have rye) I started with the twice a day feedings and my starter got much more active. I ended up with a bunch of discard and made crackers and the biscuits. I laminated the biscuits with apricot, cumin, cheese and chive topped with a brushing of heavy cream as shown in Martin and Arlo's video. I'm a big fan of sourdough now having been a yeasted bread baker for quite some time (I love the French Style country bread!) I would like to find a way to add some whole wheat to the flour mix and still get the spring. I did bake both loaves as boules and cold proofed towards the end and baked in a dutch oven.
