I just left mine, not on purpose, for 48 hours. Life got too crazy and I didn't get to it at the 24 hour mark. Or even the 36 hour mark. I made it this morning and I have to say, the smell of the sponge was AMAZING! I can't wait to taste this bread in a few hours!
