Hello, I appreciate any help. I've tried to make this recipe 2 times now. I don't have a mixer so I'm doing everything by hand. I don't have a scale so I'm measuring by volume; I followed the "fluff, sprinkle, scrap" guidelines the 2nd time and had slightly better results, but both times my dough is really dry after I add the additional 2 cups flour. I had to add extra water to the dough. Still, my dough looks nothing like the images here after mixing (satiny) and looks more like the dough in the YouTube video for "making the dough". I fear overworking the dough to accomplish that satiny texture. The dough is currently resting for the final folds so I don't know how it's turned out. I guess I'm wondering if I need a stand mixer to make this dough, if not, what am I doing wrong for the dough to not reach that same consistency? Should I admit defeat and just stick with other sourdough recipes?
